Carrot cake bars

A simple, sweet treat to make with the kids or simply to enjoy with that 4pm coffee!

Ingredients:

Dry:

  • 200g Oats
  • 1 tsp baking powder
  • 30g chopped dates
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp salt

Wet:

  • 200ml milk
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1 egg
  • 2 tbsp melted honey
  • 2 grated carrots

Method:

  1. Preheat oven to 180 degrees
  2. Mix all dry ingredients together
  3. In a separate bowl mix all the wet ingredients together
  4. Add all the ingredients in one large bowl and stir
  5. Grease a medium baking tray and add mixture
  6. Bake in the oven for 25-30 minutes
  7. Once cooked, let them cool and add a drizzle of icing sugar or top with walnuts
